WASHINGTON - Cherry Cola BBQ Wings with Pop Rocks? It could happen. Actually, it already has, thanks to one very creative DC chef.
Damian Brown, executive chef at Takoda Restaurant and Beer Garden is anything but traditional in the kitchen. He loves to cook outside the box, so to speak-- and this time, he's adding a little crackle-- and pop-- to his wing recipe. ...in the form of Pop Rocks!
Brown's barbeque sauce includes cherry cola, ketchup, apple cider vinegar, and brown sugar. Mix it all together in a pot, and then reduce on a stove top. (We know what you're thinking: how much? Chefs don't like to measure... and that's straight from this chef!)
Next, the wings are rubbed with a secret spice mix, and flash fried. After they're cooked, he tosses the sauce and wings together in a bowl.
Finally, the fun can begin. Brown garnishes his sauced up wings with cherry Pop Rocks. You'll know them when you hear them-- with that same pop you remember from your childhood! The cola makes them sweet, but the Pop Rocks make 'em sizzle.
Brown has worked in other DC restaurants, but says Takoda is the first place he's had total control of the kitchen-- which is key when it comes to getting really creative. Right now, he says he's working on building a whole collection of wing recipes-- AND he's planning to put them all together in a book called Crazy Wings.
