Getting your Thanksgiving turkey smoking hot with 'Smokehouse Live'

- Jim Foss, owner and pit-master at Smokehouse Live in Leesburg joined us with tips on how to prepare a smoking Thanksgiving turkey!

Buttermilk Marinade

Ingredients:

1 Qt. buttermilk
1 Tb. fresh sage
1 Tb. fresh thyme
1/4 cup garlic, Fresh
1/2 ea. Jumbo onion, rough chop
1/4 cup lemon juice
1/4 cup Dijon mustard
1/8 cup brown mustard
1/8 cup yellow mustard
1 Tb dried mustard
1/4 cup Texas Pete
2 Tb ground black pepper
1 bu. Scallions, rough chop
3 Tb kosher salt

Directions:
Place all ingredients into a blender and puree till smooth.
Marinate Turkeys 48 Hours and inject.
ALSO IS A FANTASTIC MARINADE FOR FRIED CHICKEN!

Poultry Power

Ingredients:
2 gal. Kosher salt
13 lb. brown sugar
1 box corn starch

.5 gal. ground white pepper
.5 gal. Ground black pepper
1 cup cayenne pepper
.5 gal. Lemon pepper
.5 gal. dried sage
.5 gal. Dried marjoram
.5 gal. onion powder
.5 gal. Chili powder

Directions:
In large mixer with whisk attachment combine 1st three ingredients and combine well on low speed for a minute.
Add all remaining ingredients and mix to combine.
