FOX 5's Erin Como cooks breakfast for the GoodDayDC morning team

- What better way to welcome someone to the good day team then to cook them a delicious meal?

But Erin Como turned the tables by volunteering to cook breakfast for the entire FOX 5 morning team!

Breakfast Potatoes:

-A bag of red bliss potatoes

Salt, Pepper, Paprika, garlic salt, onion salt, Extra Virgin Olive Oil, 1 red pepper and 1 yellow onion

Directions: Coat a large frying pan with a generous portion of oil, add the diced up potatoes- then sprinkle with a coating of paprika and the other mix of seasoning (I don't have exact portions- I just add and taste until I like the flavor- depends how much flavor you prefer)

Let the potatoes cook over medium heat for about 25 minutes turning with a spatula every so often) then add the chopped onion and red pepper and cook for another 15 min or so....I turn the heat up a bit after the pepper and onion are added to get that nice brown layer on the outside! They are DELICIOUS!


Meat lovers:
-Maple Sausage
-shredded cheddar cheese
-3 eggs
-salt and pepper

Directions: Prepare the bacon and sausage then cut into small pieces- set aside

Whisk 3 eggs in a mixing bowl and add salt and pepper for taste coat the frying pan (on medium heat in a light coat of butter)

Once the butter is melted, add the egg mix to the pan- let cook for about 2 minutes then tilt the pan and let the runny center move to the outside edges.. once it is almost completely cooked add the bacon, sausage, and a generous amount of cheese to one side of the omelet.

Now the tricky part: Get a spatula under the side without the filling mix and in a quick motion fold over…if the egg mix isn’t cooked well enough it will break so don’t rush it J - Let set for about 30 seconds in the pan and you have a perfect omelet prepared!
