6 amazing ways to do corn on the cob this summer

Summer means grilling-- and that means corn on the cob.. but who says it has to be the plain old kind you're used to? Blogger Joanne Ozug of Fifteen Spatulas showed us four ways you can make your corn on the cob the hit of your next cookout.

How to cook the corn:

Shuck the corn, then boil in salted water* for 7-8 minutes, until the kernels are tender. Drain the corn, then it's ready for toppings.

*Season the water in the same way you’d season pasta water, with several tablespoons. It should taste salty like ocean water.


Coconut Curry Corn on the Cob

Ingredients:
1/4 cup virgin coconut oil*
1/2 tsp yellow curry powder
1/4 tsp salt
4 ears fresh corn on the cob, cooked
1/2 cup chopped cilantro, for garnish

Directions:
In a small bowl, stir to combine the coconut oil, curry powder, and salt. Brush evenly over cooked corn on the cob. Sprinkle the cilantro all over the corn. Enjoy!

*If the coconut oil is solid, microwave in a small bowl for 20-30 seconds, until in liquid form.


Honey Pistachio Corn on the Cob

Ingredients:
4 ears fresh corn on the cob, cooked
1/4 cup good-quality honey, preferably raw and unfiltered
1/2 cup finely chopped pistachios
zest of 1 lime

Directions:
Drizzle the honey on the corn, then sprinkle the chopped pistachios on top. Zest the lime evenly over the corn. Enjoy!


Bacon Parmesan Corn on the Cob

Ingredients:
4 ears fresh corn on the cob, cooked
1/4 cup salted butter, melted
1/2 cup finely chopped cooked bacon
1/2 cup finely grated parmesan cheese

Directions:
Brush the corn with the butter. Sprinkle on the bacon and parmesan cheese, pressing gently so the toppings stick. Enjoy!

 

Cayenne Honey Butter Corn on the Cob

Ingredients:
1/4 cup salted butter
2 tbsp honey
1/4 tsp cayenne pepper, or to taste
4 ears fresh corn on the cob, cooked

Directions:
In a microwave safe bowl, combine the butter, honey, and cayenne. Microwave for 30 seconds until the butter has melted, then stir to combine. Alternatively, heat the ingredients on the stovetop until the butter is melted, then stir to combine. Brush the corn with the butter. Enjoy!


Chipotle Lime Corn on the Cob

Ingredients:
1/4 cup salted butter, melted
4 tsp lime juice
zest of 1 lime
1/2 tsp ground chipotle chile pepper
4 ears fresh corn on the cob, cooked

Directions:
In a small bowl, combine the butter, lime juice, lime zest, and ground chipotle. Brush the corn with the butter mixture. Enjoy!


Harissa & Roasted Garlic Corn on the Cob

Ingredients:
1 head garlic, about 12 cloves
1/4 cup mild harissa paste
1/4 cup olive oil
1/4 tsp salt
4 ears fresh corn on the cob, cooked
1/4 cup chopped cilantro

Directions:
Preheat oven to 400 degrees F. Slice the head of garlic through the center, then wrap the entire head in aluminum foil. Roast for 30 minutes, until the cloves are soft and brown. Squeeze the garlic out of the skins, then mash into a paste. Add the harissa, olive oil, and salt to the garlic, and mix well. Brush all over the corn, then sprinkle with cilantro. Enjoy!
